When the grapes that are to be used for wine have been harvested, they must be further separated from the stems. This is a painstaking job that requires a great deal of patience. At the same time it is important to weed out the last damaged grapes. There are destemming machines for this that can be purchased abroad. The harvest in 2006 was carried out over several days, since it is important not to harvest more than one can manage to sort and possibly press or freeze down. There is also some variation in the timing of ripening between the different varieties.
